These Air Fryer Cheesy Taco Bombs wrap everything you love about tacos in a golden, flaky puff pastry shell. With melty cheddar centers and bold taco-seasoned beef, they’re quick to make, irresistibly crispy, and perfect for parties, snacking, or fun weeknight dinners.
Ingredients
1 pound ground beef
1 packet taco seasoning
1 tablespoon water
1 cup cheddar cheese, cubed
1 sheet puff pastry, thawed
1 egg, beaten (for egg wash)
Optional: 2 tablespoons crushed Doritos or grated Parmesan for topping
Instructions
1. Brown ground beef in a skillet over medium heat until fully cooked. Drain excess grease.
2. Stir in taco seasoning and water. Simmer until well combined and thickened. Let it cool.
3. Roll out puff pastry on a lightly floured surface. Cut into 4-inch squares.
4. Place 1 tablespoon of taco meat and 1 cube of cheddar cheese in the center of each square.
5. Fold the pastry over into a triangle or bring corners together to form a pouch. Seal tightly.
6. Brush the tops with egg wash and sprinkle with Doritos or Parmesan if using.
7. Preheat air fryer to 375°F. Arrange bombs in the basket without overcrowding.
8. Air fry for 8–10 minutes or until golden brown and puffed.
9. Let cool for 3–5 minutes before serving with dipping sauces.
Notes
Let the filling cool before wrapping to prevent the pastry from getting soggy.
Don’t overfill the pastry squares—keep it to about 1 tablespoon of filling for best results.
Chill assembled bombs for 5–10 minutes before air frying for cleaner shape and less leakage.
