Ingredients
1 lb fresh okra pods
1/2 cup cornmeal
1/4 cup all-purpose flour
1 egg
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
Cooking spray or light oil
Instructions
- Rinse okra and pat dry. Trim stems and cut into 1/2-inch pieces if desired.
- In one bowl, whisk the egg. In another bowl, combine cornmeal, flour, paprika, garlic powder, salt, and pepper.
- Dip okra in egg, then coat with the cornmeal mixture. Shake off excess.
- Lightly spray air fryer basket. Arrange okra in a single layer.
- Air fry at 400°F (200°C) for 10-12 minutes, shaking halfway, until golden and crisp.
- Serve hot with your favorite dipping sauce.
