Description

This Creamy Alfredo Lasagna Soup blends the rich flavors of traditional Alfredo with the hearty comfort of lasagna, served in a cozy soup form. Creamy, cheesy, and loaded with tender noodles and vegetables, it’s the perfect one-pot meal for cold nights or anytime comfort food cravings hit.


Ingredients

8 oz lasagna noodles, broken into pieces

2 tablespoons butter

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

½ teaspoon dried basil

½ teaspoon salt

¼ teaspoon black pepper

1 cup cherry tomatoes, halved

1 cup fresh spinach (optional)

1 ½ cups shredded mozzarella cheese


Instructions

1. Melt butter in a large pot over medium heat. Add minced garlic and cook for 1 minute until fragrant.

2. Pour in chicken broth and stir in Italian seasoning, basil, salt, and pepper. Bring to a simmer.

3. Break lasagna noodles into 2-3 inch pieces and add to the pot. Cook until noodles are al dente.

4. Reduce heat to low and stir in heavy cream.

5. Add grated Parmesan cheese and stir until melted and the soup thickens slightly.

6. Add cherry tomatoes and spinach. Stir until spinach wilts.

7. Stir in mozzarella until melted and creamy.

8. Serve hot, garnished with extra Parmesan, cracked pepper, or fresh basil.

Notes

Break the lasagna noodles before boiling so they fit on a spoon and mimic lasagna layers.

For an extra flavor boost, brown some Italian sausage and stir it in before adding the cream.

To reheat leftovers, add a splash of broth or cream to bring back the soup’s consistency.
