Ingredients

2 pounds ground beef (80/20 preferred)

1 cup quick oats

1 medium onion, finely chopped

2 large eggs

0.75 cup milk

1 teaspoon salt

0.5 teaspoon black pepper

0.5 teaspoon garlic powder

0.25 teaspoon dried thyme

0.66 cup ketchup

0.25 cup brown sugar

1 tablespoon yellow mustard


Instructions

1. Preheat the oven to 350°F (175°C).

2. In a large bowl, combine ground beef, oats, chopped onion, eggs, milk, salt, pepper, garlic powder, and thyme. Mix gently until just combined—do not overmix.

3. Shape the mixture into a loaf and place it in a greased 9×5-inch loaf pan or shape it freehand on a parchment-lined baking sheet.

4. In a separate bowl, mix ketchup, brown sugar, and mustard to create the glaze.

5. Spread half of the glaze on top of the uncooked meatloaf.

6. Bake uncovered for 45 minutes.

7. Remove from the oven, spread the remaining glaze on top, and bake for an additional 15–20 minutes, or until the internal temperature reaches 160°F.

8. Let the meatloaf rest for 10 minutes before slicing for best texture and clean cuts.

Notes

For the best texture, avoid overmixing the meat mixture—it can make the loaf tough.

Allowing the meatloaf to rest after baking helps lock in juices and makes slicing easier.

If you want more glaze coverage, double the glaze portion and save some for drizzling after baking.
