Ingredients
3 cups cooked chicken (shredded or cubed)
2 cups cooked white rice
1 can (10.5 oz) cream of chicken soup
1/2 cup sour cream
1/2 cup chicken broth
1 packet Italian dressing mix
4 oz cream cheese
1 1/2 cups shredded mozzarella cheese
1 tablespoon chopped parsley (optional)
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
2. If not using pre-cooked chicken, cook your chicken breasts or thighs and shred or cube them once cooled.
3. Cook the rice according to package directions and set aside.
4. In a saucepan over medium heat, combine the cream of chicken soup, cream cheese, sour cream, chicken broth, and Italian dressing mix. Stir until smooth.
5. In a large bowl, mix the chicken, rice, and sauce until evenly combined.
6. Spread the mixture into the prepared baking dish.
7. Top with shredded mozzarella cheese.
8. Bake for 25–30 minutes, or until bubbly and golden on top.
9. Let rest for 5 minutes before serving. Sprinkle with parsley if desired.
