Ingredients
1 ½ cups apple cider (to reduce)
¾ cup brown sugar
½ cup unsalted butter, softened
1 large egg
1 ¾ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
1 teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon salt
¼ cup granulated sugar (for rolling)
1 teaspoon cinnamon (for rolling)
8 ounces cream cheese, softened
1 ½ cups powdered sugar
1 teaspoon vanilla extract
½ cup thick caramel sauce (store-bought or homemade)
Instructions
1. Reduce the apple cider: In a saucepan over medium heat, simmer 1½ cups apple cider until reduced to ½ cup. Let it cool completely.
2. Make the cookie dough: Cream butter and brown sugar together until fluffy. Add egg, vanilla, and cooled apple cider reduction. In another bowl, whisk flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Gradually mix dry ingredients into wet until just combined.
3. Shape and roll: Combine ¼ cup granulated sugar and 1 teaspoon cinnamon in a bowl. Scoop dough (1 tablespoon each), roll into balls, then roll in cinnamon sugar.
4. Bake: Place cookies on parchment-lined baking sheets and bake at 350°F (175°C) for 9–11 minutes. Let them cool completely.
5. Make the frosting: Beat cream cheese until smooth. Add powdered sugar and vanilla, and beat until light and fluffy.
6. Assemble: Pipe or spoon frosting onto the bottom of half the cookies. Drizzle caramel over the frosting. Top with the remaining cookies to form sandwiches. Drizzle more caramel on top if desired.
Notes
Chill the dough before baking to prevent spreading and keep the cookies thick and soft.
Use reduced apple cider for a richer, more concentrated flavor. It makes a big difference!
Store frosting-filled cookies in the fridge, but let them rest at room temperature before serving for best texture.
