Description
Authentic Classic Beef Stroganoff is a creamy, savory dish featuring tender beef, mushrooms, and a luscious sour cream sauce. Perfect served over noodles, rice, or mashed potatoes, it brings comfort and elegance to the table in under an hour.
Ingredients
1 lb beef sirloin or tenderloin, thinly sliced against the grain
2 tablespoons olive oil
2 tablespoons unsalted butter
1 medium onion, finely chopped
2 cloves garlic, minced
8 oz cremini or button mushrooms, sliced
1 tablespoon all-purpose flour
1 cup beef broth
1 teaspoon Dijon mustard
1/2 cup sour cream
Salt, to taste
Black pepper, to taste
1 tablespoon chopped fresh parsley, for garnish (optional)
Cooked egg noodles, rice, or mashed potatoes, for serving
Instructions
1. Slice the beef into thin strips, cutting against the grain. Clean and slice mushrooms, mince garlic, and chop onion.
2. Heat 1 tablespoon olive oil and 1 tablespoon butter in a skillet over medium-high heat. Sear beef in batches for 1–2 minutes per side. Remove and set aside.
3. Reduce heat to medium. Add remaining butter and sauté onion for 3–4 minutes until soft. Add mushrooms and cook until browned. Stir in garlic and cook for 30 seconds.
4. Sprinkle flour over vegetables and stir to coat. Slowly add beef broth, stirring and scraping the pan. Add Dijon mustard and simmer 3–4 minutes.
5. Lower heat and stir in sour cream until smooth. Return beef and juices to skillet, stir to coat, and heat through for 2–3 minutes without boiling.
6. Season with salt and pepper. Serve hot over noodles, rice, or potatoes. Garnish with parsley.
Notes
For extra richness, stir in a splash of white wine before adding the broth.
Use Greek yogurt as a lighter sour cream substitute (add off heat to prevent curdling).
Don’t overcrowd the pan when searing the beef—work in batches for a proper sear.
