Ingredients
1.5 kg Yukon Gold potatoes
1/4 cup extra virgin olive oil
1/4 cup fresh lemon juice
4 cloves garlic, minced
2 teaspoons dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup vegetable or chicken broth
Instructions
- 1. Preheat the oven to 400°F (200°C).
- Cut potatoes into thick wedges, about 4-6 per potato. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, pepper, and broth.
- Toss potatoes in the marinade until well coated.
- Arrange potatoes in a single layer in a large baking dish.
- Roast for 45-55 minutes, flipping halfway, adding more broth if needed.
- Once golden and tender, sprinkle with extra oregano or parsley and serve with lemon wedges.
Notes
Best served immediately for crisp edges.
Reheat leftovers in the oven, not microwave, to maintain texture.
