Ingredients
2 lbs Yukon Gold potatoes, halved or quartered
1/4 cup extra virgin olive oil
1/4 cup fresh lemon juice
4 cloves garlic, minced
1 tsp dried oregano
1 tsp sea salt
1/2 tsp black pepper
1 tsp fresh thyme leaves (optional)
Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper.

Add potatoes to the bowl and toss until well coated.

Arrange potatoes cut side down on the prepared baking sheet.

Pour any remaining marinade over the potatoes.

Roast for 45-55 minutes, flipping halfway through, until golden and crispy.
