Ingredients
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cardamom
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1/2 cup sour cream or plain Greek yogurt
1 teaspoon vanilla extract
Powdered sugar for dusting (optional)
Instructions
1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line with parchment paper.
2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cardamom.
3. In a large mixing bowl, beat butter and sugar until light and fluffy (about 2-3 minutes).
4. Add eggs one at a time, beating well after each. Stir in vanilla extract.
5. Add dry mixture in two additions, alternating with sour cream. Mix just until combined.
6. Pour batter into the prepared pan and smooth the top evenly.
7. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
8. Cool in pan for 10 minutes, then transfer to a wire rack. Dust with powdered sugar when cool.
Notes
For the boldest flavor, grind your own cardamom from green pods just before using.
Don’t overmix the batter—just stir until combined for a tender crumb.
Let the cake fully cool before dusting with powdered sugar so it doesn’t melt in.
