A juicy, herb-roasted chicken dish infused with lemon, garlic, and oregano—this easy Baked Greek Lemon Chicken is perfect for a weeknight dinner or meal prep. Roasted over a bed of sweet onions and lemon slices, it creates a flavorful pan sauce you’ll want to pour over everything.
Ingredients
6 bone-in, skin-on chicken thighs
2 lemons, 1 sliced and 1 juiced
4 cloves garlic, minced
2 tablespoons olive oil
1 large red onion, cut into thick wedges
1½ teaspoons dried oregano
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons fresh chopped parsley
Instructions
1. Preheat oven to 400°F (200°C).
2. Arrange red onion slices and lemon rounds in a baking dish.
3. In a small bowl, mix olive oil, garlic, oregano, salt, and pepper.
4. Rub mixture over chicken thighs.
5. Place chicken skin-side up on top of onions and lemon.
6. Squeeze juice from the second lemon over the chicken.
7. Roast for 40–45 minutes or until internal temperature reaches 165°F (74°C).
8. Spoon pan juices over chicken and garnish with fresh parsley before serving.
Notes
Let chicken rest for 5 minutes after baking to lock in juices.
For crispier skin, broil for 2 minutes at the end.
Add chopped potatoes to the pan for a one-dish meal.
