Description

Baked Onions with Asiago Cheese is a warm, buttery side dish that transforms humble onions into a savory showstopper. Roasted in broth and cream until tender, then topped with nutty Asiago cheese, these golden onions are rich, flavorful, and perfect for holidays or cozy nights in.


Ingredients

6 large yellow or sweet onions

4 tablespoons unsalted butter

3 cloves garlic, finely minced

1 cup chicken or vegetable broth

6 tablespoons heavy cream

1 cup grated Asiago cheese

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh thyme or parsley, optional garnish


Instructions

1. Preheat oven to 375°F (190°C).

2. Peel the onions and trim only the root end slightly so they stand upright. Cut off the top 1/4 of each onion and carefully scoop a small cavity in the center using a paring knife.

3. In an oven-safe skillet, melt the butter over medium heat. Place onions cut-side down and sear for 5–7 minutes until lightly browned. Flip them upright.

4. Add minced garlic and cook for 2 minutes. Pour broth into the skillet, enough to come halfway up the onions. Add 1 tablespoon of heavy cream into the hollow center of each onion.

5. Season the onions with salt and pepper. Cover the skillet with foil and bake for 40–45 minutes, or until onions are fork-tender.

6. Uncover, top each onion with grated Asiago cheese, and return to the oven uncovered. Bake for another 10–15 minutes until cheese is melted and golden.

7. Garnish with thyme or parsley and serve warm with a spoonful of broth.

Notes

Use firm, round onions to keep them upright and intact while baking.

Don’t skip the searing step — it adds a deep, roasted flavor and improves texture.

Add a little extra broth when reheating to keep them juicy and prevent drying out.
