Description
This Banana Nut Bread is everything a cozy bake should be—moist, rich with banana flavor, filled with toasted pecans, and topped with an optional caramel glaze that takes it to dessert-level delicious. Perfect for breakfast, snack, or sweet gifting.
Ingredients
3 ripe bananas
1 ¾ cups all-purpose flour
¾ cup brown sugar
½ cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
½ teaspoon salt
¾ cup chopped pecans or walnuts (plus extra for topping, optional)
(Optional) Caramel glaze for drizzling
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
2. Mash bananas in a bowl until smooth. Set aside.
3. In a mixing bowl, cream softened butter and brown sugar until light and fluffy.
4. Add eggs one at a time, beating well after each. Stir in mashed bananas and vanilla.
5. In a separate bowl, whisk together flour, baking soda, and salt.
6. Gradually fold dry mixture into wet ingredients. Do not overmix.
7. Fold in chopped nuts. Reserve some for topping, if desired.
8. Pour batter into prepared loaf pan. Smooth the top and sprinkle extra nuts.
9. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
10. Let cool in the pan for 10 minutes, then transfer to a wire rack.
11. (Optional) Drizzle with caramel glaze once cooled. Let it set before slicing.
Notes
For extra banana flavor, use bananas that are deeply speckled or nearly black.
To toast nuts, spread on a baking sheet and bake at 350°F for 8–10 minutes.
If making ahead, freeze slices individually and reheat as needed.
