Banoffee Pie

  • Author: Jam Scott
  • Total Time: 1 hour 25 minutes
  • Yield: 1 (9-inch) pie, about 8 slices
  • Diet: Vegetarian

Description

A luscious no-bake dessert that layers silky homemade toffee, fresh bananas, and whipped cream over a buttery graham cracker crust. Finished with a sprinkle of chocolate shavings, it’s the ultimate treat for pie lovers who want something rich, simple, and unforgettable.

Ingredients

1 1/2 cups graham cracker crumbs

6 tablespoons unsalted butter, melted

1 can (14 oz) sweetened condensed milk

3 ripe bananas, sliced into coins

1 1/4 cups heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

1 ounce chocolate, shaved for topping

Instructions

1. Combine graham cracker crumbs and melted butter in a bowl. Mix until well combined, then press firmly into the bottom and sides of a 9-inch pie dish. Chill in the refrigerator for at least 15 minutes to set.

2. Pour the sweetened condensed milk into a saucepan. Cook over low heat, stirring constantly for 20–25 minutes until thickened and golden. Remove from heat and let cool slightly.

3. Pour the cooled toffee into the chilled crust and spread evenly. Let it sit for a few minutes.

4. Slice the bananas and arrange them in a single layer over the toffee.

5. In a cold bowl, whip the heavy cream, powdered sugar, and vanilla until soft peaks form. Spread the whipped cream over the bananas.

6. Sprinkle chocolate shavings over the top. Refrigerate the pie for at least 1 hour before serving to allow the layers to set.

Notes

Use ripe but firm bananas to maintain a pleasant texture in each slice.

Store-bought dulce de leche works if you’re short on time—just warm it gently to spread.

For extra stability, stabilize whipped cream with 1 teaspoon of cornstarch or instant pudding mix.
