Ingredients
6 medium Yukon Gold potatoes
4 tablespoons unsalted butter, melted
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried Italian herbs
2 tablespoons grated Parmesan cheese
2 tablespoons fresh parsley or chives, chopped
1 pinch red pepper flakes (optional)
Instructions
1. Place each potato between two wooden spoons and slice thinly without cutting all the way through.
2. In a bowl, mix melted butter, olive oil, garlic, salt, pepper, and herbs.
3. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
4. Arrange potatoes on the sheet and brush generously with garlic butter mixture, making sure it gets between slices.
5. Bake for 45 minutes, then remove and brush again with butter and sprinkle Parmesan cheese on top.
6. Return to oven and bake an additional 15–20 minutes until crispy and golden.
