Quick to prepare and endlessly adaptable, it makes for a flavorful lunch or a light, satisfying dinner.

Ingredients

1 lb ground beef (85/15 or 90/10)

1 large head romaine lettuce, chopped

1 cup cherry tomatoes, halved

1/2 cup dill pickles, diced

1/4 cup red onion, diced

1 cup shredded sharp cheddar cheese

1 avocado, diced

1/2 cup cucumber slices

1 tsp sesame seeds (optional)

For the Special Sauce:

1/2 cup mayonnaise

2 tbsp ketchup

1 tbsp yellow mustard

1 tbsp sweet pickle relish

1 tsp white vinegar

1/2 tsp onion powder

1/4 tsp smoked paprika

Instructions

  1. Cook the Ground Beef: In a skillet over medium-high heat, brown the ground beef. Season with salt, pepper, and garlic powder. Drain excess fat.
  2. Make the Sauce: In a small bowl, mix together all the sauce ingredients. Adjust seasoning as desired and refrigerate until ready.
  3. Chop the Vegetables: Prepare lettuce, tomatoes, pickles, onion, avocado, and cucumber.
  4. Assemble the Salad: In a large bowl, layer lettuce as the base. Top with ground beef, veggies, cheese, and avocado.
  5. Finish with Sauce: Drizzle special sauce over the top and sprinkle sesame seeds if using. Serve immediately.
