Ingredients

1 cup cottage cheese (full-fat recommended)

2 large eggs

3 tablespoons maple syrup

1 teaspoon vanilla extract

1/4 cup almond flour

1 cup fresh blueberries

Pinch of salt

For the crumble topping:

2 tablespoons almond flour

1 tablespoon brown sugar

1 tablespoon melted butter


Instructions

  1. Preheat oven to 350°F (175°C). Grease a small baking dish.
  2. In a large bowl, whisk cottage cheese, eggs, maple syrup, vanilla, and salt until smooth.
  3. Stir in almond flour.
  4. Gently fold in blueberries. Pour into the baking dish and smooth the top.
  5. In a separate bowl, mix almond flour, brown sugar, and melted butter. Sprinkle over the batter.
  6. Bake for 35–40 minutes, until edges are golden and center is just set.
  7. Let cool for 5–10 minutes before serving.
