Ingredients
1 cup cottage cheese (full-fat recommended)
2 large eggs
3 tablespoons maple syrup
1 teaspoon vanilla extract
1/4 cup almond flour
1 cup fresh blueberries
Pinch of salt
For the crumble topping:
2 tablespoons almond flour
1 tablespoon brown sugar
1 tablespoon melted butter
Instructions
- Preheat oven to 350°F (175°C). Grease a small baking dish.
- In a large bowl, whisk cottage cheese, eggs, maple syrup, vanilla, and salt until smooth.
- Stir in almond flour.
- Gently fold in blueberries. Pour into the baking dish and smooth the top.
- In a separate bowl, mix almond flour, brown sugar, and melted butter. Sprinkle over the batter.
- Bake for 35–40 minutes, until edges are golden and center is just set.
- Let cool for 5–10 minutes before serving.
