Description

This creamy and colorful Boat Dip is made with zesty Rotel tomatoes, ranch seasoning, and a mix of cheese, corn, and fresh veggies. Ready in minutes and perfect for parties, it’s the ultimate no-cook appetizer for summer gatherings or lazy weekends.


Ingredients

1 cup sour cream

1 can (10 oz) Rotel diced tomatoes and green chiles, drained

1 packet ranch seasoning mix

1 cup canned Mexican-style corn (or sweet corn), drained

1 cup shredded cheddar cheese

1/2 red bell pepper, diced

1/4 cup green onions or chives, sliced

Optional: 1 small jalapeño, diced (for added heat)


Instructions

1. Drain the Rotel and corn well to avoid excess moisture in the dip.

2. In a mixing bowl, combine the sour cream and ranch seasoning until smooth.

3. Add in the Rotel, corn, shredded cheddar, diced bell pepper, and green onions. Mix until fully blended.

4. Chill the dip for at least 30 minutes to allow the flavors to meld.

5. Serve cold with tortilla chips or fresh veggies. Garnish with extra green onions or cheddar if desired.

Notes

For a lighter version, substitute Greek yogurt for the sour cream.

Fire-roasted corn adds a smoky depth of flavor.
