Description

Golden, crispy on the outside, and melty on the inside—these Breakfast Roll-Ups are everything you want to wake up to. Packed with eggs, cheese, and your favorite breakfast meats, they’re perfect for busy mornings or weekend brunches.


Ingredients

Flour Tortillas

Eggs

Shredded Cheese (Cheddar, Monterey Jack, or Pepper Jack)

Cooked Breakfast Meat (bacon, sausage, or ham)

Butter or Oil

Salt and Pepper

Optional: sautéed onions, bell peppers, spinach, hot sauce


Instructions

  1. Cook the meat: Prepare bacon, sausage, or ham and set aside.
  2. Scramble the eggs: Cook in a skillet with butter and season with salt and pepper.
  3. Warm tortillas: Microwave briefly or heat in a dry skillet to make them pliable.
  4. Assemble: Lay cheese, eggs, meat, and optional add-ins onto each tortilla. Top with more cheese.
  5. Roll up: Fold in sides, then roll tightly.
  6. Sear: In a skillet with butter or oil, cook seam-side down until golden and crisp, about 2–3 minutes per side.
  7. Serve: Cut in half or serve whole. Best enjoyed hot!
