Ingredients
1 cup brown sugar
6 tablespoons unsalted butter
1 teaspoon vanilla extract
1 1/2 cups graham cracker crumbs
3/4 cup toffee bits
1/4 teaspoon salt
2 cups milk chocolate or semisweet chocolate, melted
2 tablespoons extra graham cracker crumbs or toffee bits, for topping
Instructions
1. In a small saucepan over low heat, melt the butter and stir in the brown sugar until smooth and glossy. Remove from the heat, then stir in the vanilla extract and salt.
2. Add the graham cracker crumbs and toffee bits to the saucepan and mix until a soft dough forms.
3. Transfer the mixture to a bowl and chill for 30 to 45 minutes, until firm enough to scoop.
4. Roll the chilled mixture into 16 equal truffles and place them on a parchment-lined tray.
5. Chill the truffles again for 15 to 20 minutes so they stay firm for dipping.
6. Melt the chocolate until smooth, then dip each truffle into the chocolate and let the excess drip off.
7. Place the coated truffles back on the tray and sprinkle the tops with extra graham cracker crumbs or toffee bits before the chocolate sets.
8. Let the chocolate harden completely, then serve or refrigerate until ready to enjoy.
