Description

These Buffalo Cauliflower Wraps are bold, spicy, and packed with crunchy roasted cauliflower, a creamy avocado crema, and refreshing toppings—all wrapped in a soft tortilla. Perfect for weeknights, meal prep, or casual dinners when you’re craving something meatless but satisfying.


Ingredients

1 medium head cauliflower, cut into florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/3 cup buffalo sauce

1 large ripe avocado

1/4 cup Greek yogurt or plant-based yogurt

1 tablespoon lime juice

4 large tortilla wraps

1/2 cup cucumber slices (optional)

1/4 cup chopped cilantro (optional)

1/2 cup shredded lettuce or red cabbage (optional)


Instructions

1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

2. Toss cauliflower florets with olive oil, garlic powder, onion powder, salt, and pepper.

3. Spread cauliflower on baking sheet and roast for 25–30 minutes, flipping halfway through, until golden and crisp on the edges.

4. Remove cauliflower from the oven and toss with buffalo sauce while still hot.

5. In a bowl, mash the avocado, then mix in yogurt, lime juice, and a pinch of salt to make avocado crema.

6. Warm tortillas slightly to make them pliable.

7. Spread a layer of avocado crema on each tortilla.

8. Top with buffalo cauliflower and your choice of toppings like cucumber, cilantro, lettuce, or red cabbage.

9. Fold and wrap tightly. Serve immediately or wrap in foil for on-the-go.

Notes

Don’t skip roasting the cauliflower—it gives the wrap that irresistible crunch.

For a dairy-free version, use plant-based yogurt in the crema.

Assemble wraps just before eating to prevent sogginess.
