Ingredients
2 lbs baby red potatoes
1/2 cup unsalted butter
1/2 cup grated Parmesan cheese
2 tablespoons garlic powder
1 teaspoon onion powder
1 teaspoon dried parsley
1/2 teaspoon paprika
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Instructions
- 1. Preheat oven to 400°F (200°C) and wash and dry the potatoes thoroughly.
- Cut larger potatoes in half to ensure even cooking.
- Place butter in a baking dish and melt it in the oven. In a bowl, mix potatoes with garlic powder, onion powder, paprika, salt, pepper, and parsley. Add potatoes to the melted butter and toss to coat evenly.
- Spread potatoes in a single layer in the baking dish.
- Roast for 35–45 minutes, flipping halfway through, until golden and tender.
- Remove from oven and immediately sprinkle Parmesan cheese over the top.
- Serve hot and enjoy.
Notes
Make sure potatoes are completely dry before roasting to help them crisp up nicely
Do not overcrowd the pan, as spacing helps achieve even browning.
For extra flavor, add fresh minced garlic halfway through roasting instead of at the beginning.
