Description
These noodles are rich, buttery, and filled with the bold, savory flavor of fresh garlic and nutty parmesan. It’s the kind of simple comfort food that feels indulgent but takes minimal effort. Perfect for a quick weeknight dinner or a cozy side dish.
Ingredients
1 pound spaghetti or linguine
6 tablespoons unsalted butter
6 cloves fresh garlic, minced
1 cup freshly grated Parmesan cheese
1 cup reserved pasta water (use as needed)
1 teaspoon salt
½ teaspoon freshly cracked black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Boil pasta in salted water until al dente. Reserve 1 cup of pasta water before draining.
2. In a large skillet over medium heat, melt the butter. Add minced garlic and sauté for 1–2 minutes until fragrant and just golden.
3. Add the drained pasta to the skillet and toss to coat in the garlic butter.
4. Add ¼ to ½ cup of reserved pasta water to help emulsify the sauce.
5. Stir in the grated Parmesan and toss until the cheese melts and the sauce coats the noodles.
6. Season with salt and black pepper.
7. Top with chopped parsley and serve immediately.
Notes
For best results, use freshly grated Parmesan—it melts better and gives a silkier sauce.
Don’t skip the reserved pasta water; it’s the key to a smooth, creamy finish.
Be gentle with the garlic—just golden is perfect. Too much browning turns it bitter.
