Ingredients
2 large chicken breasts, cubed
1 ½ tablespoons Cajun seasoning
1 tablespoon olive oil
2 tablespoons butter, divided
3 cloves garlic, minced
1 cup heavy cream
¾ cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh dill
8 ounces rotini pasta
Salt and pepper, to taste
Instructions
1. Cube the chicken breasts into bite-sized pieces. Toss them with Cajun seasoning until well coated.
2. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes until golden and fully cooked. Set aside.
3. Boil rotini pasta in salted water according to package directions until al dente. Drain and set aside.
4. In the same skillet used for the chicken, lower the heat to medium. Add the remaining butter and minced garlic. Sauté for 1-2 minutes until fragrant.
5. Pour in the heavy cream. Simmer gently, then stir in the Parmesan cheese. Cook for 3-5 minutes until the sauce thickens slightly.
6. Add the cooked pasta to the sauce. Toss to coat well. Stir in chopped parsley and dill. Season with salt and pepper to taste.
7. Plate the creamy pasta and top with the Cajun chicken bites. Garnish with extra herbs and serve hot.
Notes
Let the Cajun chicken sit with the seasoning for 10 minutes before cooking to deepen flavor.
Add a splash of cream or pasta water when reheating to maintain sauce creaminess.
For extra depth, stir in a teaspoon of smoked paprika to the sauce while it simmers.
