Description

This creamy Cajun Chicken Pasta is loaded with juicy, seared chicken breasts, colorful bell peppers, and penne pasta tossed in a bold, smoky cream sauce. Ready in under 30 minutes, it’s the perfect weeknight dinner packed with comfort and spice.


Ingredients

2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

Salt and black pepper, to taste

2 tablespoons olive oil

1 tablespoon butter

8 oz penne pasta

1/2 red bell pepper, sliced

1/2 green bell pepper, sliced

1/2 yellow bell pepper, sliced

2 garlic cloves, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

Fresh parsley, for garnish (optional)


Instructions

  1. Season both sides of chicken breasts with Cajun seasoning, salt, and pepper.
  2. In a skillet over medium-high heat, add olive oil and butter. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and let rest.
  3. Cook pasta in salted water until al dente. Drain, reserving 1/2 cup pasta water.
  4. In the same skillet, sauté bell peppers until tender-crisp. Add garlic and cook for 30 seconds.
  5. Pour in heavy cream. Simmer, then stir in Parmesan and more Cajun seasoning to taste. Let it thicken.
  6. Add cooked pasta and toss to coat. Use reserved pasta water if needed to loosen sauce.
  7. Slice chicken and place over pasta. Garnish with parsley and serve hot.
