Ingredients
2 boneless, skinless chicken breasts
2 tablespoons Cajun seasoning
Salt and black pepper, to taste
2 tablespoons olive oil
1 tablespoon butter
8 oz penne pasta
1/2 red bell pepper, sliced
1/2 green bell pepper, sliced
1/2 yellow bell pepper, sliced
2 garlic cloves, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
Fresh parsley, for garnish (optional)
Instructions
- Season both sides of chicken breasts with Cajun seasoning, salt, and pepper.
- In a skillet over medium-high heat, add olive oil and butter. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and let rest.
- Cook pasta in salted water until al dente. Drain, reserving 1/2 cup pasta water.
- In the same skillet, sauté bell peppers until tender-crisp. Add garlic and cook for 30 seconds.
- Pour in heavy cream. Simmer, then stir in Parmesan and more Cajun seasoning to taste. Let it thicken.
- Add cooked pasta and toss to coat. Use reserved pasta water if needed to loosen sauce.
- Slice chicken and place over pasta. Garnish with parsley and serve hot.
