Description

Cajun Potato Soup is a rich and hearty Southern-style dinner recipe that combines tender potatoes, crispy bacon, and a smoky Cajun-spiced broth. Creamy, bold, and comforting, it’s perfect for cold nights or cozy gatherings.


Ingredients

6 slices bacon, diced

1 medium onion, diced

3 cloves garlic, minced

4 cups Yukon Gold potatoes, peeled and diced

4 cups chicken broth

1 1/2 cups heavy cream

2 tablespoons Cajun seasoning (adjust to taste)

1 1/2 cups shredded cheddar cheese

Salt and pepper, to taste

Green onions or chives, chopped (for garnish)


Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving 1–2 tablespoons of fat in the pot.
  2. Add diced onions and cook until translucent, about 5 minutes. Stir in garlic and cook 1 more minute.
  3. Add potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes, until potatoes are tender.
  4. Stir in Cajun seasoning and heavy cream. Simmer for 5 more minutes.
  5. Lightly mash some of the potatoes for a creamier texture.
  6. Stir in shredded cheddar cheese until melted.
  7. Serve hot, garnished with bacon and green onions or chives.
