Ingredients
6 slices bacon, diced
1 medium onion, diced
3 cloves garlic, minced
4 cups Yukon Gold potatoes, peeled and diced
4 cups chicken broth
1 1/2 cups heavy cream
2 tablespoons Cajun seasoning (adjust to taste)
1 1/2 cups shredded cheddar cheese
Salt and pepper, to taste
Green onions or chives, chopped (for garnish)
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving 1–2 tablespoons of fat in the pot.
- Add diced onions and cook until translucent, about 5 minutes. Stir in garlic and cook 1 more minute.
- Add potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes, until potatoes are tender.
- Stir in Cajun seasoning and heavy cream. Simmer for 5 more minutes.
- Lightly mash some of the potatoes for a creamier texture.
- Stir in shredded cheddar cheese until melted.
- Serve hot, garnished with bacon and green onions or chives.
