Ingredients
1 and 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/2 cup unsalted butter, melted
16 ounces cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 medium apples, peeled, cored, and diced
2 tablespoons unsalted butter
1/4 cup brown sugar
1 teaspoon ground cinnamon
1/2 cup thick caramel sauce
1/3 cup chopped walnuts or pecans
Instructions
1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
2. Mix graham cracker crumbs, sugar, cinnamon, and melted butter. Press into the pan and bake for 8–10 minutes. Let cool slightly.
3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla. Pour over the crust.
4. In a skillet, cook diced apples with butter, brown sugar, and cinnamon until slightly softened (about 5–7 minutes). Let cool briefly, then spoon over the cheesecake layer.
5. Bake for 30–35 minutes until the center is just set. Let cool to room temperature, then refrigerate for at least 3 hours.
6. Once chilled, drizzle with caramel and sprinkle with nuts. Slice and serve chilled or at room temperature.
