Description
Sweet, crunchy, and cinnamon-spiced, this Caramel Churro Chex Mix is your go-to snack for parties, holidays, or any time you need a quick treat. With a buttery caramel glaze and a final toss of cinnamon sugar, each bite tastes just like a churro—no frying needed.
Ingredients
2 cups Rice Chex
2 cups Corn Chex
1 cup mini pretzels
½ cup brown sugar
¼ cup unsalted butter
2 tablespoons light corn syrup
¼ teaspoon baking soda
¼ cup granulated sugar
1 teaspoon ground cinnamon
Instructions
1. Preheat the oven to 275°F and line a large baking sheet with parchment paper. In a large mixing bowl, combine Rice Chex, Corn Chex, and mini pretzels.
2. In a saucepan over medium heat, melt the butter. Stir in the brown sugar and corn syrup. Let it come to a gentle boil for 2 minutes. Remove from heat and quickly stir in baking soda until foamy.
3. Pour the caramel glaze over the cereal mix and fold quickly with a spatula to coat evenly.
4. Spread the mixture on the prepared baking sheet and bake for 45 minutes, stirring every 15 minutes.
5. While still warm, sprinkle with cinnamon-sugar mixture (combine granulated sugar and cinnamon), then toss gently.
6. Let it cool completely, break apart any clumps, and store in an airtight container.
Notes
Mix gently but thoroughly when coating with caramel to avoid crushing the cereal.
Be sure to stir during baking to keep the texture crisp and prevent burning.
Store in a sealed container to maintain crunch and freshness.
