Ingredients
2 sheets puff pastry, thawed
3 large yellow onions, thinly sliced
2 tablespoons unsalted butter
1 tablespoon olive oil
1 ½ cups Gruyère cheese, shredded
1 teaspoon fresh thyme leaves (optional)
1 large egg, beaten
½ teaspoon salt
¼ teaspoon black pepper
Instructions
1. In a large skillet, heat the butter and olive oil over medium heat. Add the onions, salt, and pepper, and cook slowly, stirring occasionally for 25–30 minutes until deeply caramelized and golden. Set aside to cool slightly.
2. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
3. On a lightly floured surface, gently roll out both puff pastry sheets to smooth creases. Transfer one sheet to the lined baking sheet.
4. Spoon the cooled caramelized onions onto the pastry in a ring shape, leaving a 1-inch border around the edge. Top with shredded Gruyère and sprinkle fresh thyme if using.
5. Lay the second puff pastry sheet over the top, pressing gently around the filling to seal.
6. Using a sharp knife, cut slits all around the ring about 2 inches apart. Twist each piece to expose the filling side up.
7. Brush the entire wreath with the beaten egg.
8. Bake for 22–25 minutes or until golden and puffed. Let cool slightly and serve warm or at room temperature.
Notes
Keep the puff pastry cold while working with it to ensure maximum flakiness.
Don’t rush the onion caramelization — low and slow is the key to deep flavor.
If you prep this ahead, assemble and refrigerate it unbaked. Add the egg wash just before baking for best results.
