Ingredients
3 large eggs
14 oz sweetened condensed milk
2 cups whole milk
1 cup granulated sugar
3 tbsp unsalted butter melted
1 cup all-purpose flour
1 tbsp baking powder
1 1/2 cups unsweetened shredded coconut divided (1/2 cup in batter, 1 cup for topping)
Instructions
1. Preheat oven to 350°F (175°C) and grease a bundt or round cake pan.
2. In a blender, combine eggs, condensed milk, whole milk, sugar, melted butter, flour, and baking powder until smooth.
3. Pulse in 1/2 cup shredded coconut just to mix.
4. Pour batter into prepared pan.
5. Bake for 40–50 minutes or until a toothpick inserted comes out clean.
6. Cool 10 minutes, then invert onto a plate.
7. Top with remaining coconut while still warm.
Notes
Mix gently: Over-blending after adding coconut can toughen the crumb.
Use a light-colored pan to avoid over-browning.
Best next day: Chill overnight for neat slices.
