Description
Crispy, cheesy cauliflower fritters that are tender inside and golden outside — perfect as a snack, side dish, or vegetarian main. Made with fresh cauliflower, herbs, and cheese, these fritters are quick to make and incredibly satisfying.
Ingredients
2 cups cauliflower florets (steamed and chopped)
2 eggs
½ cup all-purpose flour
½ cup grated Parmesan or crumbled feta cheese
2 tablespoons chopped fresh parsley or dill
1 clove garlic, minced
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons olive oil (for frying)
Instructions
1. Steam or boil cauliflower florets until tender. Drain and let cool slightly, then chop or mash lightly.
2. In a large bowl, mix cauliflower, eggs, flour, cheese, herbs, garlic, salt, and pepper until combined.
3. Scoop 2 tablespoons of the mixture, shape into small patties, and set aside on parchment paper.
4. Heat olive oil in a skillet over medium heat. Cook fritters in batches, flattening slightly, 3-4 minutes per side, until golden. Drain on paper towels.
5. Serve warm with lemon wedges, yogurt dip, or aioli.
Notes
Make sure cauliflower is well-drained to avoid soggy fritters.
For gluten-free, use almond flour or a GF flour blend.
Bake option: 400°F (200°C) for 20-25 minutes, flipping halfway.
