Description
This Cheeseburger Meatloaf takes your favorite burger flavors—beef, cheddar, and bacon—and bakes them into a comforting, sliceable dinner. It’s juicy, cheesy, and perfect for busy weeknights or Sunday suppers.
Ingredients
1.5 lb ground beef (80/20)
1 cup breadcrumbs
2 large eggs
1 cup shredded cheddar cheese (divided)
6 slices cooked bacon (chopped and divided)
1 small onion (finely chopped)
2 tablespoons ketchup
1 tablespoon yellow mustard
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan.
2. Cook bacon in advance and let it cool, then chop into small pieces. Grate the cheddar and dice the onion.
3. In a large bowl, combine ground beef, breadcrumbs, eggs, chopped onion, half the cheddar, half the bacon, ketchup, mustard, Worcestershire sauce, salt, and pepper. Mix just until combined.
4. Form into a loaf on the prepared baking sheet or press into loaf pan. Bake for 40–45 minutes or until the internal temperature reaches 160°F (71°C).
5. Remove from oven and top with the remaining cheese and bacon. Return to oven for another 5–7 minutes until cheese is melted.
6. Let rest for 10 minutes before slicing and serving.

Avoid overmixing the meat mixture—this keeps the loaf tender, not tough.

Add a little hot sauce or chopped pickles for a tangy burger-like twist.
