Ingredients
12 oz rotini pasta
1.5 lbs boneless, skinless chicken breast or thighs, diced
3 tablespoons butter
4 cloves garlic, minced
2 cups heavy cream
1 cup freshly grated Parmesan cheese
1 cup shredded mozzarella cheese
1 tablespoon chopped parsley (fresh or dried)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
Instructions
1. Bring a large pot of salted water to a boil. Add rotini pasta and cook until al dente according to package instructions. Drain and set aside.
2. In a large skillet, melt butter over medium heat. Add minced garlic and cook until fragrant. Add diced chicken, season with salt, pepper, and paprika. Sear until golden and fully cooked, about 6–8 minutes. Remove chicken and set aside.
3. In the same skillet, pour in heavy cream and bring to a gentle simmer. Whisk in Parmesan cheese gradually until melted and smooth. Add mozzarella and stir until fully incorporated.
4. Toss the cooked pasta into the Alfredo sauce. Stir to coat thoroughly and let simmer for 2–3 minutes.
5. Add chicken back into the skillet or top each serving with it. Garnish with parsley. Serve warm and enjoy!
Notes
Use freshly grated Parmesan for the smoothest sauce that won’t clump.
