Description

Rich, hearty, and incredibly cheesy, this Cheesy Beef and Italian Sausage Rigatoni in Garlic Butter Sauce is the ultimate comfort meal. Loaded with ground beef, savory sausage, a velvety garlic butter cream sauce, and bubbling layers of mozzarella and Parmesan, it’s a weeknight dinner that feels like a special occasion.


Ingredients

1 lb rigatoni pasta

1/2 lb ground beef

1/2 lb Italian sausage (mild or spicy)

4 cloves garlic, minced

4 tbsp unsalted butter

1 cup heavy cream

1 1/2 cups shredded mozzarella cheese

3/4 cup grated Parmesan cheese

1 cup fresh spinach (optional)

1/2 tsp crushed red pepper flakes (optional)

Salt and black pepper to taste


Instructions

1. Preheat oven to 400°F (or set broiler to high if finishing under broiler).

2. Cook rigatoni in salted boiling water until al dente. Drain and set aside.

3. In a large skillet, brown the ground beef and Italian sausage. Drain any excess fat.

4. In the same skillet, melt butter and sauté minced garlic for 1–2 minutes.

5. Pour in heavy cream and simmer for 3–5 minutes, stirring occasionally.

6. Stir in Parmesan cheese until melted and the sauce thickens slightly.

7. Add salt, pepper, and red pepper flakes to taste.

8. Combine cooked pasta, meat, optional spinach, and half the mozzarella into the sauce. Stir well.

9. Pour mixture into a baking dish and top with remaining mozzarella and a sprinkle of Parmesan.

10. Bake for 10–15 minutes until bubbly and golden brown.

Notes

Use bronze-cut rigatoni for better sauce adhesion and a rustic texture.

Don’t overbake—remove once cheese is golden and bubbling.

For a vegetarian version, skip the meat and add mushrooms or zucchini.
