Description

Golden and crisp on the outside, creamy and cheesy on the inside, these Cheesy Cauliflower Patties are a mouthwatering way to enjoy vegetables. Perfect as a snack, side, or even a light meal, they’re packed with flavor and come together with simple ingredients.


Ingredients

1 medium head of cauliflower, cut into florets

2 large eggs

1/2 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

1/4 cup breadcrumbs (regular or panko)

2 tablespoons all-purpose flour

2 tablespoons chopped fresh chives (plus extra for garnish)

1 garlic clove, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

Olive oil or vegetable oil, for frying


Instructions

  1. Steam the cauliflower florets until tender (about 10 minutes), then mash until smooth but slightly textured.
  2. In a large bowl, combine mashed cauliflower, eggs, cheddar, Parmesan, breadcrumbs, flour, chives, garlic, salt, and pepper. Mix well.
  3. Form the mixture into small patties, about 2 inches wide and 1/2 inch thick.
  4. Heat oil in a skillet over medium heat. Fry patties in batches for 3–4 minutes per side until golden and crispy.
  5. Drain on paper towels and garnish with extra chives. Serve warm with your favorite dipping sauce.
