Golden and crisp on the outside, creamy and cheesy on the inside, these Cheesy Cauliflower Patties are a mouthwatering way to enjoy vegetables. Perfect as a snack, side, or even a light meal, they’re packed with flavor and come together with simple ingredients.
Ingredients
1 medium head of cauliflower, cut into florets
2 large eggs
1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs (regular or panko)
2 tablespoons all-purpose flour
2 tablespoons chopped fresh chives (plus extra for garnish)
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
Olive oil or vegetable oil, for frying
Instructions
- Steam the cauliflower florets until tender (about 10 minutes), then mash until smooth but slightly textured.
- In a large bowl, combine mashed cauliflower, eggs, cheddar, Parmesan, breadcrumbs, flour, chives, garlic, salt, and pepper. Mix well.
- Form the mixture into small patties, about 2 inches wide and 1/2 inch thick.
- Heat oil in a skillet over medium heat. Fry patties in batches for 3–4 minutes per side until golden and crispy.
- Drain on paper towels and garnish with extra chives. Serve warm with your favorite dipping sauce.
