Description

This Cheesy Chicken Tortellini Bake for Two is a cozy, creamy comfort meal perfect for any night of the week. Filled with tender chicken, cheese-filled tortellini, wilted spinach, and a luscious cream cheese sauce, it’s all baked to golden, bubbly perfection—ideal for sharing or meal prepping small portions.


Ingredients

2 cups cheese tortellini (refrigerated or fresh)

1 cup cooked chicken breast, chopped

1 cup fresh spinach

4 ounces cream cheese

1/2 cup milk

1 cup shredded mozzarella cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 teaspoon olive oil or butter (optional, for sautéing spinach)


Instructions

1. Bring a pot of salted water to boil and cook the tortellini according to package instructions (about 3–5 minutes). Drain and set aside.

2. In a saucepan over medium heat, combine the cream cheese and milk. Stir until melted and smooth. Season with garlic powder, onion powder, salt, and pepper.

3. Sauté the spinach in olive oil or butter just until wilted (optional step if using fresh spinach).

4. In a medium bowl, mix the cooked tortellini, chopped chicken, wilted spinach, and the creamy sauce. Toss gently to combine.

5. Preheat oven to 375°F (190°C). Lightly grease a 1-quart or 8×8-inch baking dish.

6. Pour the tortellini mixture into the dish and top with shredded mozzarella.

7. Bake uncovered for 20–25 minutes, until bubbly and golden. Broil for 1–2 minutes at the end if a crispier top is desired.

8. Let rest for 5 minutes before serving.

Notes

If using frozen tortellini, cook according to the package first and be sure to drain thoroughly.

For a richer sauce, use whole milk or substitute half-and-half.

Leftovers reheat well—just add a splash of milk to keep the sauce creamy.
