Ingredients
2 pounds Yukon Gold potatoes
2 cups heavy cream
3 cloves garlic, finely minced
2 tablespoons butter
1 1⁄2 cups shredded Gruyère cheese
1⁄2 cup grated Parmesan cheese
1 teaspoon salt
1⁄2 teaspoon black pepper
1 teaspoon fresh or dried thyme
Instructions
1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
2. Peel and thinly slice the potatoes (1⁄8 inch thick). Place in cold water to prevent browning.
3. In a saucepan, melt butter over medium heat. Add garlic and sauté until fragrant, about 1 minute.
4. Add the heavy cream, salt, pepper, and thyme. Simmer for 5 minutes.
5. Drain and pat dry the potato slices.
6. Layer 1⁄3 of the potatoes in the prepared baking dish. Pour some of the garlic cream over them and sprinkle with both cheeses. Repeat layers, ending with cheese.
7. Cover with foil and bake for 45 minutes.
8. Remove foil and bake uncovered for another 20–25 minutes, until the top is golden and bubbly.
9. Let rest for 10 minutes before serving.
Notes
Use a mandoline for even, thin slices to ensure uniform cooking.
Letting the dish rest after baking allows the layers to firm up for cleaner slices.
For extra flavor, mix a little Dijon mustard into the cream sauce.
