Ingredients

1 pound ground beef

1 tablespoon olive oil

1 medium yellow onion, diced

1 green bell pepper, chopped

1 red bell pepper, chopped

2 cloves garlic, minced

28 ounces frozen diced hash brown potatoes, thawed

1 teaspoon salt

0.5 teaspoon black pepper

1 teaspoon paprika

1 teaspoon dried oregano

0.5 teaspoon onion powder

0.5 teaspoon garlic powder

2 cups shredded sharp cheddar cheese, divided

10.5 ounces condensed cream of mushroom soup

0.5 cup sour cream

0.25 cup milk


Instructions

1. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess grease.

2. Add onion, green and red bell peppers, and garlic. Sauté for about 5 minutes until soft.

3. Stir in salt, pepper, paprika, oregano, onion powder, and garlic powder. Mix well to coat.

4. Lower heat and stir in cream of mushroom soup, sour cream, and milk. Stir until smooth and warmed through.

5. In a large bowl, combine thawed potatoes, beef mixture, and 1½ cups of the shredded cheese. Mix to combine.

6. Preheat oven to 375°F (190°C). Transfer everything to a greased 9×13-inch baking dish.

7. Sprinkle remaining ½ cup cheese over the top.

8. Bake uncovered for 30–35 minutes, until bubbly and golden.

9. Let rest 5 minutes before serving.

Notes

Thaw your potatoes first: Frozen potatoes must be fully thawed to prevent extra moisture and uneven baking.

Use a cast iron skillet if you want to make this one-pan—just transfer straight to the oven if it’s oven-safe.
