Description

This Cheesy Hamburger Potato Soup is a hearty, creamy comfort dish made with ground beef, tender potatoes, and sharp cheddar cheese. Perfect for cold nights or busy weekdays, it’s a satisfying one-pot meal that brings all the cozy flavors together with minimal effort.


Ingredients

1 lb ground beef

4 cups diced potatoes (Yukon Gold or Russet)

1 small onion, diced

2 cloves garlic, minced

4 cups beef broth

1 cup heavy cream or half-and-half

2 cups shredded cheddar cheese

2 tbsp all-purpose flour

2 tbsp butter

1/2 tsp paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)


Instructions

  1. In a large pot, brown the ground beef over medium heat until no longer pink. Drain excess fat and set aside.
  2. In the same pot, melt butter and sauté diced onion until translucent. Add garlic and cook for 1 minute.
  3. Sprinkle in flour, stirring constantly for 1-2 minutes to create a roux.
  4. Slowly pour in beef broth while stirring to avoid lumps. Add potatoes, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer 15-20 minutes until potatoes are fork-tender.
  6. Return beef to the pot. Stir in heavy cream, then gradually add shredded cheese until melted.
  7. Adjust seasoning as needed. Mash some potatoes slightly for thicker texture if desired.
  8. Serve hot with extra cheese and fresh parsley on top.
