Ingredients

1 large egg
¼ cup sour cream

2 tablespoons chopped fresh chives or parsley
¼ teaspoon garlic powder
Salt and pepper to taste
Extra shredded cheese for topping
Butter or nonstick spray for greasing the muffin tin
Instructions
1. Preheat oven to 400°F (200°C) and grease a muffin tin with butter or nonstick spray.
2. In a large mixing bowl, combine mashed potatoes, egg, sour cream, shredded cheese, garlic powder, and chopped herbs. Season with salt and pepper.
3. Stir until the mixture is fully blended and creamy.
4. Spoon the mixture evenly into the prepared muffin tin, filling each cup nearly to the top.
5. Sprinkle extra cheese on top of each puff.
6. Bake for 20–25 minutes until golden brown and puffed up.
