Ingredients
2 cups cooked shredded chicken
4 oz cream cheese, softened
0.5 cup sour cream
1 packet ranch seasoning mix
1 cup shredded mozzarella cheese
0.5 cup shredded sharp cheddar cheese
2 tablespoons chopped parsley
1 tube refrigerated biscuit dough (8-count)
1 egg, beaten
0.5 cup shredded cheddar cheese
chopped parsley for garnish
Instructions
1. In a medium bowl, combine the shredded chicken, softened cream cheese, sour cream, ranch seasoning, mozzarella, cheddar, and parsley. Mix until well blended and creamy.
2. Flatten each biscuit into a 4-inch round using your hands or a rolling pin.
3. Scoop about 2 tablespoons of filling into the center of each biscuit. Fold the dough over and pinch the seams tightly to form a ball.
4. Place seam-side down on a parchment-lined baking sheet.
5. Brush each ball with the beaten egg and sprinkle with cheddar cheese.
6. Preheat oven to 375°F (190°C) and bake for 18–22 minutes, until golden brown and the cheese is melted.
7. Garnish with chopped parsley and serve warm.
Notes
Be sure to seal the dough tightly to prevent the cheese from leaking during baking.
You can make these ahead of time and refrigerate before baking for easy meal prep.
For an extra twist, mix in chopped cooked bacon or green chiles into the filling.
