Cheesy Sausage & Rice is a one-skillet wonder that blends smoky sausage, colorful vegetables, and creamy rice into a cozy, cheesy meal that’s perfect for weeknights. It’s hearty, full of flavor, and comes together in under 45 minutes—all in one pan!
Ingredients
1 pound smoked sausage, sliced into coins
1 cup long grain white rice (or brown rice)
1 tablespoon olive oil or butter
1 small onion, diced
2 cloves garlic, minced
1 bell pepper, diced
1 medium carrot, diced
2 ½ cups chicken broth
1 ½ cups shredded cheddar cheese
½ teaspoon paprika (optional)
Salt and black pepper to taste
Chopped parsley or green onions for garnish (optional)
Instructions
1. Slice the smoked sausage into coins. In a large skillet over medium heat, add olive oil or butter and sear the sausage slices until browned. Remove and set aside.
2. In the same skillet, add diced onion, garlic, bell pepper, and carrots. Sauté for about 5 minutes until softened and fragrant.
3. Stir in the rice and let it toast for 1–2 minutes to develop flavor.
4. Pour in chicken broth. Season with salt, pepper, and paprika. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed.
5. Add the browned sausage back to the skillet and stir gently.
6. Sprinkle shredded cheddar cheese over the top, cover again, and let sit for 3–5 minutes to allow the cheese to melt.
7. Garnish with parsley or green onions if desired. Serve warm.
Notes
For extra richness, use a mix of cheddar and Monterey Jack cheese.
Add spinach or peas at the end of cooking for extra color and nutrition.
Don’t skip toasting the rice—it enhances flavor and texture.
