Ingredients

2 pounds baby Yukon gold or red potatoes, halved

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

0.5 teaspoon salt

0.5 teaspoon black pepper

1 pound ground beef (or turkey)

2 tablespoons taco seasoning

0.25 cup water

1.5 cups shredded sharp cheddar cheese

Sour cream

Chopped fresh tomatoes

Sliced green onions or chives

Diced jalapeños

Guacamole or diced avocado

Fresh cilantro


Instructions

1. Preheat oven to 425°F (220°C). Toss halved potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread them cut-side down on a parchment-lined baking sheet. Roast for 25–30 minutes or until golden and crisp.

2. While potatoes roast, cook the ground beef in a skillet over medium heat until browned. Drain any excess grease. Add taco seasoning and water. Simmer for 5 minutes until thickened.

3. Transfer roasted potatoes to an oven-safe dish. Top with cooked taco meat and shredded cheddar cheese. Return to oven for 5–7 minutes or until cheese is melted.

4. Add your favorite toppings such as sour cream, tomatoes, green onions, or guacamole. Serve hot and enjoy!
