Ingredients
2 large chicken breasts, boneless and skinless
10 oz rotini pasta
1 tablespoon olive oil
2 tablespoons butter
4 cloves garlic, minced
1 cup heavy cream
1 cup freshly grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley (optional)
Instructions
1. Season chicken breasts with salt, pepper, paprika, and Italian seasoning.
2. In a large skillet, heat olive oil over medium heat. Sear chicken breasts for 5–6 minutes on each side until golden and fully cooked. Set aside and let rest.
3. Bring a pot of salted water to a boil. Cook rotini pasta according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain.
4. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
5. Pour in heavy cream, stir, and bring to a simmer. Add Parmesan cheese and stir until melted and smooth.
6. Add the cooked pasta to the sauce, tossing well to coat. Add reserved pasta water as needed to loosen the sauce.
7. Slice the rested chicken and place it over the creamy pasta. Garnish with parsley and extra Parmesan if desired.
