Description

This creamy Chicken à la King is a timeless comfort dish filled with tender chicken, mushrooms, peas, and carrots in a velvety sauce. Perfect served over puff pastry shells, egg noodles, or toast points for a cozy, satisfying meal.


Ingredients

2 tablespoons butter

1 small onion, chopped

2 cloves garlic, minced

1 pound chicken breast, diced

1 cup mushrooms, sliced

1/2 cup carrots, thinly sliced

2 tablespoons all-purpose flour

1 1/2 cups chicken broth

3/4 cup heavy cream

1/2 cup green peas (frozen)

3/4 teaspoon salt (or to taste)

1/2 teaspoon black pepper

1 tablespoon chopped fresh parsley


Instructions

1. In a large skillet, melt butter over medium heat. Add chopped onion and garlic and sauté until translucent and fragrant, about 3–4 minutes.

2. Add diced chicken, season with salt and pepper, and cook until chicken is browned and fully cooked. Remove from pan and set aside.

3. In the same skillet, add mushrooms and carrots. Cook until mushrooms are golden and carrots are tender, about 5–7 minutes.

4. Sprinkle flour over the vegetables and stir for 1–2 minutes to form a roux.

5. Slowly whisk in chicken broth until smooth and slightly thickened. Then add heavy cream and stir until a velvety sauce forms.

6. Return chicken to the pan and stir in peas. Let simmer for 5–8 minutes until the sauce thickens and everything is heated through.

7. Adjust seasoning, sprinkle with parsley, and serve hot over puff pastry, noodles, or toast.

Notes

Add a splash of white wine after the garlic for deeper flavor.

For a lighter option, use half-and-half instead of heavy cream.

Use rotisserie chicken to cut prep time in half.
