Description
Chicken Alfredo Pasta is a creamy and comforting Italian-inspired dish made with tender seared chicken, rich homemade Alfredo sauce, and fettuccine pasta. It’s easy enough for weeknights and impressive enough for guests.
Ingredients
2 boneless skinless chicken breasts
8 oz fettuccine pasta
1 tablespoon olive oil
2 tablespoons butter
3 garlic cloves, minced
1 ½ cups heavy cream
1 cup freshly grated Parmesan cheese
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons fresh parsley (optional)
Instructions
1. Pat chicken breasts dry and season both sides with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken on each side for 6–7 minutes until golden and fully cooked. Remove and rest.
3. Cook fettuccine in a large pot of salted boiling water until al dente. Reserve ½ cup pasta water, then drain.
4. In the same skillet, reduce heat to medium. Melt butter and sauté garlic for 30 seconds.
5. Pour in heavy cream and bring to a simmer. Stir continuously for 4–5 minutes to thicken.
6. Lower heat and slowly whisk in Parmesan until sauce is smooth. Add pasta water as needed to loosen the sauce.
7. Add cooked pasta and toss to coat. Slice chicken and add it back to the skillet.
8. Let everything warm together for 2 minutes. Serve hot, garnished with parsley and more Parmesan if desired.
Notes
For extra richness, use freshly grated Parmesan rather than pre-shredded.
Don’t overcook the garlic—it should be fragrant but not browned.
Always reserve pasta water; it’s the secret to adjusting sauce consistency.
