Ingredients
2 cups cooked shredded chicken
4 cups frozen French fries (or homemade)
1 cup cheese curds (or chopped mozzarella)
2 cups brown gravy (homemade or store-bought)
4 slices cooked bacon, crumbled (optional)
2 tablespoons chopped chives or green onions
Instructions
1. Preheat oven to 425°F (or prepare oil if frying). Cook French fries according to package or recipe instructions until crispy and golden. Set aside.
2. Warm the shredded chicken in a skillet or microwave until heated through.
3. In a small saucepan, heat the brown gravy over medium heat, stirring occasionally until simmering.
4. Arrange the hot fries on a serving dish or plate. Top with the warm chicken and scatter cheese curds evenly over the top.
5. Pour the hot gravy over the entire dish to melt the cheese curds.
6. If using, sprinkle with crumbled bacon and chopped chives or green onions.
7. Serve immediately while everything is hot and melty.
Notes
Use freshly cooked fries or reheat them in an air fryer to maintain their crispness under the gravy.
Cheese curds give authentic poutine texture, but mozzarella chunks or pearls work great too.
To save time, use rotisserie chicken and a quality pre-made gravy.
