Chicken and Spinach Casserole with Cream Cheese

Description

A creamy, cheesy baked casserole featuring tender chunks of chicken, spinach, and a luscious cream cheese sauce. This comforting dish is topped with golden, bubbly cheese and is perfect for family dinners or prepping meals ahead.


Ingredients

1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon Italian seasoning

1 small onion, diced

3 cloves garlic, minced

6 cups fresh spinach (or 10 oz frozen, drained)

8 oz cream cheese, softened

1 1/2 cups shredded mozzarella cheese

1/4 cup grated Parmesan cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium-high heat, heat olive oil and cook chicken seasoned with salt, pepper, and Italian seasoning until golden and cooked through. Set aside.
  3. In the same skillet, sauté onion until soft, then add garlic and cook for 1 minute more.
  4. Add spinach and cook until wilted (or heated through if using frozen).
  5. Lower heat and stir in cream cheese until melted and smooth.
  6. In a baking dish, layer cooked chicken and pour the creamy spinach mixture over it.
  7. Top with mozzarella and Parmesan cheese.
  8. Bake for 20-25 minutes or until cheese is bubbly and golden. Broil for 2-3 minutes if desired.
