Ingredients

3 cups cooked, shredded chicken

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

1 packet (or 2 tbsp) fajita seasoning

1 tbsp olive oil

1 ½ cups shredded Monterey Jack or Mexican blend cheese

Chopped cilantro (optional, for garnish)


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch casserole dish.

  2. In a skillet, heat olive oil over medium heat. Add peppers and onion, cook for 5–7 minutes until softened.

  3. Stir in shredded chicken and fajita seasoning. Cook 2 more minutes to combine flavors.

  4. Transfer mixture to casserole dish and spread evenly.

  5. Top with shredded cheese.

  6. Bake for 15–20 minutes or until cheese is melted and bubbling.

  7. Garnish with chopped cilantro and serve hot.
