Ingredients
3 cups cooked, shredded chicken
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 medium onion, sliced
1 packet (or 2 tbsp) fajita seasoning
1 tbsp olive oil
1 ½ cups shredded Monterey Jack or Mexican blend cheese
Chopped cilantro (optional, for garnish)
Instructions

Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch casserole dish.
