Description

A balanced and flavorful meal featuring juicy grilled chicken, fluffy white rice, creamy avocado, and a vibrant tomato salsa. It’s easy to make, great for meal prep, and perfect for a healthy lunch or dinner.


Ingredients

2 boneless skinless chicken breasts

1 tablespoon olive oil

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon garlic powder

½ teaspoon paprika

1 tablespoon lime juice (plus more for garnish)

1 cup white rice

1 ripe avocado, sliced

1 cup diced tomatoes

¼ cup finely diced red onion

¼ cup chopped fresh cilantro


Instructions

  1. Marinate the Chicken: Toss chicken breasts in olive oil, lime juice, salt, pepper, garlic powder, and paprika. Let sit for at least 15 minutes.
  2. Grill or Sear: Heat a grill pan or skillet over medium-high heat. Cook chicken for 5–6 minutes per side or until cooked through (165°F internal temperature). Let rest, then slice.
  3. Cook the Rice: Prepare 1 cup white rice according to package instructions. Fluff and optionally season with lime zest or cilantro.
  4. Prepare the Salsa: Combine diced tomatoes, red onion, chopped avocado, cilantro, and a squeeze of lime juice in a bowl. Gently toss to combine.
  5. Assemble the Bowl: Add rice to each bowl, layer on sliced chicken, then top with salsa and avocado. Garnish with extra cilantro or lime wedges.
